Modified Kofta kari (meatball curry)

Initial Ingredients:
2 to 3 medium to large onions
2 to 3 cloves of garlic
1 to 1½ tbsp of fresh grated ginger

Meatball Ingredients:
750g minced lamb or beef, preferably lean
one fresh chilli (chopped) or half a teaspoon of chilli powder
½ teaspoon of salt
1½ teaspoons of garam masala
½ teaspoon of cardamom powder (optional)
1 tablespoon of roughly chopped mint (optional)

Sauce Ingredients:
One tin of tomato or equivalent in fresh tomatoes
1 teaspoon of turmeric powder
1½ teaspoons of garam masala
½ teaspoon of cinnamon
1 fresh chilli or ½ teaspoon of chilli powder
½ teaspoon of salt
1 tablespoon of roughly chopped mint (optional)

First steps:
Place the onion, garlic and ginger in a food processor, and process it till its somewhat roughly chopped, the pieces of onion should be no larger than ones fingernail, anything smaller is fine.

Meatballs:
Place half the onion mixture in a bowl, and add all the other meatball ingredients and mix well, then roll the mixture into meatballs, whatever size seems right to you.

Place the meatballs on a plate, and microwave at high for 6 to 8 minutes, depending on microwave, keep the liquid that comes off them as they cook. (alternatively, you could just pop them in once you add the tomato to the sauce)

Sauce:
Place the other half of the onion mixture in a large pot or pan with enough oil to stop it from sticking and fry until its soft, then add the turmeric, chilli, cinnamon and garam masala to the mixture and fry on high heat until the mixture darkens a little, and the smell becomes more fragrant (or just until the mixture darkens a little, 3 to 5 minutes or so), make sure it doesn't stick to the bottom of the pot too much, add more oil if needed, and if it starts sticking too much, go onto the next step. Then lower the heat and add the tomato, salt and mint, cook for a few minutes, then add the meatballs and the liquid from cooking them. Add water as you see fit, and stir occasionally to avoid sticking.
 
Cook for half an hour to an hour or so, then serve with white rice.

Garam masala is the ingredient people may have trouble with: http://en.wikipedia.org/wiki/Garam_masala
Its best to buy it from a supermarket or Indian spice shop.

I have a recipe for you though.

I call it Two Can Surprise:


You will need:
1 can of Ravioli's
1 can of cheddar cheese soup.

Combind all ingredients in bowl with 3/4 cups water and microwave on high for 2-3 minutes stirring occasionally.

Let stand for 5 minutes then serve. Feeds 2-4 people.

Pumpkin Pie Crisp

A recipe I just made up, its way yummy!

3 cups of pumkin (fresh or canned)
1 can of evaporated milk
3 eggs beaten
2 cups sugar
3 tsps cinammon
1 tsp ginger
1 tsp nutmeg
1 tsp all spice
1 tsp salt

1 stick of butter
1 1/2 c oatmeal
3/4 c brown sugar

beat all the first ingredients together till creamy

in a bowl mix melted butter, oatmeal and brown sugar and coat bottom of a baking pan, (either a 9x9 or a 9x13) forming a crust

pour batter over crust

bake for 35 mins at 425

Chicken Roll Ups


2 Chicken Breast Cutlets
1/4cup cheese
1/4cup baby spinach OR broccoli OR string beans
Splash of milk
Bread crumbs
Spices to taste

Directions:

Pound chicken to 1/4inch thickness. Place cheese and veggies on the chicken.

Roll up the chicken, use toothpicks to hold together.

Roll the chicken in milk, then in the bread crumbs and spices.

Bake at 375degrees for 30-35minutes. Remove toothpicks.

1 eggplant
1/4 cup lemon juice
1/4 cup tahini
2 tablespoons sesame seeds
2 cloves garlic, minced
salt and pepper to taste
1 1/2 tablespoons olive oil

Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
Place eggplant on baking sheet, and make holes in the skin with a fork. Roast it for 30 to 40 minutes, turning occasionally, or until soft. Remove from oven, and place into a large bowl of cold water. Remove from water, and peel skin off.
Place eggplant, lemon juice, tahini, sesame seeds, and garlic in an electric blender, and puree. Season with salt and pepper to taste. Transfer eggplant mixture to a medium size mixing bowl, and slowly mix in olive oil. Refrigerate for 3 hours before serving.

Hummus
4 garlic cloves, minced and then mashed
2 15-oz cans of garbanzo beans (chickpeas), drained and rinsed
2/3 cup of tahini (roasted, not raw)
1/3 cup freshly squeezed lemon juice
1/2 cup water
1/4 cup olive oil
1/2 teaspoon of salt

In a food processor, combine the mashed garlic, garbanzo beans, tahini, lemon juice, 1/2 cup water, and olive oil. Process until smooth. Add salt, starting at a half a teaspoon, to taste.

Both recipes can be used as a dip with pita bread, crackers, vegetables, or used in whatever you want as a side dish/appetizer, or a main meal.

Ingredients:
1 c. butter, soften
3/4 c. sugar
1-1/4 tsp. ground nutmeg
1 egg
2 tsp. vanilla extract
1/2 to 1 tsp rum extract
3 c. all-purpose flour
Frosting:
1/4 c. butter
3 c. confectioners' sugar, divided
1 tsp. vanilla ex.
1 tsp. rum ex.
2 Tbsp. milk
Directions:
In a mixing bowl, cream butter and sugar. Add the nutmeg, egg and extracts, mix thoroughly. Stir in flour. If necessary, chill dough, for easir handling.
On a lightly floured surface, shape dough into 1/2 in. diameter rolls, cut each into 3 in. long pieces. Place 2 in. apart on ungreased baking sheet. Bake at 350 for 15 min. or until lightly browned. cool on wire racks.
For frosting, cream butter until light and fluffy. Add 2 cup sugar and extracts, mix well. Beat in milk and remaining sugar. frost cookies. Make lines with a fork going the long way. Then sprinkle with nutmeg.
4-1/2 dozen
These cookie are one of my most favorite cookies, of any cookie I've had. They are sooo good.

Rocky Road Christmas Tree
-------------------------------

One Christmas, we made a Christmas tree out of Rocky Road. It made a great centrepiece for the table, and tasted great too. Ours was about 20cm wide at the base, and about 40-50cm high.

You'll need:
-->a lot of rocky road (try a few recipes in small amounts first to get one you like - it needs to be quite a solid mix, otherwise the tree won't stand properly.
-->a large sheet of cardboard/plastic
-->plant pot, or similar
-->baking paper

You should probably make this a few days before you're going to eat it - It may take a while to set. Before you make the rocky road, clear out a space in your fridge or freezer - take out shelves where needed.

Cut the cardboard/plastic into a cone shape. Line it with baking paper. Put a circle of baking paper at the tip so that the rocky road mix won't drip out. Stand the cone in the pot, point down.

Make the Rocky Road -you'll need a fair bit. Pour the mix into the cone before the chocolate sets, and then put it in the fridge or freezer to set. Make sure nothing goes on top of it.

When you go to serve it, tip the tree back up the right way, so it's sitting on its base, and then take the cardboard and baking paper off. The easiest way is to keep it in the pot while you trim off the excess cardboard, then flip it onto the serving plate/dish/platter (a round one looks best - the less tacky-looking, the better. Try painting an old round platter green, red, silver or gold if you want to be fancy). Then you can take off the rest of the card - try not to touch the rocky road itself.

You can serve it just like that, or you could do some other fancy stuff to it:
--> sprinkle icing sugar over it to get "snow"
--> brush plain or white melted chocolate over it to give it a kind of "case" (or pour it over the top and let it run down the sides). Also good for fixing large holes or broken off bits.
--> make the rocky road using white chocolate for a different look.
--> for a multi-colored tree, make rocky road in batches using different coloured chocolate (put food dye into melted white chocolate). Pour in one batch, let it set, then pour in the others, letting the rocky road set after each batch. I haven't tried this, but you may need  to figure out a way to stop the layers sliding sideways once you serve it - they might not stick. You could try "gluing" the layers together using more melted chocolate afterwards, or putting small sticks or timber (clean, and covered with baking paper) in each layer of chocolate so that half sticks out the top. This will give the tree some structure too.

Then you just have to figure out how to cut it!

Key Lime Pie

(I double this recipe, because it is easy and good, and I always have a friend who would like my Key Lime Pie.  So, buy 2 crusts, and 3 cans of the Sweetened Condensed Milk [14 oz cans])

Things you need:

Graham cracker crust
Sweetened Condensed Milk (1 1/2 cans per pie)
Key Lime Juice (1/3 cup per pie)*
Six egg yolks  per pie

Put egg yolks into large bowl, and beat with mixer until yolks are light yellow, about 2 minutes.  Add the lime juice, and mix in the sweetened condensed milk.  Beat on low until everything is smooth and mixed.  

Add the mixture to the pie crust, and bake at 350º for ten minutes.  Remove from oven and let rest until pie is cool, and then refrigerate until you are ready to eat this.  

To serve, add a meringue (lots of work, which I hate), or go get a can of Cool Whip and put it on each slice as you serve it.  This is some good stuff...

*I would assume you can use regular lime juice.  I get the key lime juice at a gourmet food shop.

Raspberry Caramel Candies

INGREDIENTS  
2 cups sugar  
3 cups heavy whipping cream, divided into halves: 1 1/2 cup each
1 1/3 cups light corn syrup  
2 teaspoons raspberry extract  
1/4 to 1/2 teaspoon red paste/food coloring  

DIRECTIONS  

Line an 8-in. square pan with foil. Grease the foil with butter; set aside.  

  In a heavy saucepan, combine the sugar, 1 1/2 cups cream and corn syrup. Bring to a boil over medium heat; stirring constantly. Cook and stir until a candy thermometer reads 234° (soft-ball stage). Gradually add remaining cream; return to a boil, stirring constantly, until a candy thermometer reads 248° (firm-ball stage).  

  Remove from the heat; stir in extract and food coloring. Pour into prepared pan (do not scrape pan). Cool completely before cutting. If the caramel is too hard to slice, simply place in microwave for series of 10 seconds, until it is soft enough to cut into bite-sized pieces.  

Store in an airtight container in the refrigerator. Yield: about 1 pound (about 4 dozen).

Notes: Use your favorite flavoring: lemon, peppermint, strawberry, etc. instead of the raspberry.

Homestyle Oatmeal Cookies

1 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 cup shortening
3/4 cup brown sugar
3/4 cup granulated sugar
2 eggs
2 cups uncooked rolled oats
1 teaspoon vanilla

PREPARATION:
Sift flour with salt and soda.
Cream shortening and sugars; beat in eggs and vanilla until light and fluffy. Stir in sifted dry ingredients, rolled oats, and any chips, nuts, or dried fruit.

Drop cookie batter by teaspoonfuls onto ungreased baking sheets. Bake cookies in a preheated 350° oven for about 10 to 12 minutes; cool on racks.

Makes about 8 dozen Oatmeal Cookies.

EXTRAS: Add 1 cup chopped walnuts or pecans and 2 cups semisweet chocolate chips (or white chocolate chips, or peanut butter chips, etc.), or simply add 2 cups of your favorite chip, nut, or dried fruit for a tasty suprise!

This is really easy and I thought I'd share:

Here's what you need:
1 roll of Pillsbury Crescent Rolls
1 Tbs. of margarine
1/4 cup of sugar
1 tsp. of cinnamon

Preheat the oven to 350 degrees (see package of rolls).
Open the rolls and lay each piece of dough on a cookie sheet.
Melt the margarine in the microwave and brush each piece of dough with some.
Mix together the sugar and cinnamon.
Spoon some onto each piece of dough.
Roll the dough as instructed on the package for the rolls.
Sprinkle the top of each roll with a bit of sugar.

Bake for the time instructed on the package. It varies by oven so watch them carefully.

Banana-Chocolate Chip Biscotti
*This recipe was taken from Betty Crocker's Cookbook

1 Cup Sugar
1/2 Cup Butter
1/2 cup mashed very ripe banana (1 medium)
1 teaspoon vanilla
2 eggs
3 cups flour
3 teaspoons baking powder
1/4 teaspoon salt
1/2 cup miniature semisweet chocolate chips

1. Heat oven to 350. Grease large cookie sheet.
2. Beat sugar and butter in large bowl with electric mixer on medium speed, or mix with spoon. Beat in banana, vanilla and eggs until smooth. Stir in flour, baking powder and salt. Stir in chocolate chips.
3. Divide dough in half. Shape each half into 10x3 inch rectangle on cookie sheet with greased hands.
4. Bake about 25 minutes or until toothpick inserted in center comes out clean. Cool on cookie sheet 15 minutes.
5. Cut crosswise into 1/2 inch slices. Turn slices cut sides down on cookie sheet. Bake 10 to 12 minutes or until golden brown and dry on top. Turn cookies. Bake about 10 minutes longer or until golden brown. Remove from cookie sheet to wire rack.
Makes about 32 cookies.

1 Cup flour
2 Teaspoons baking powder
1/2 Teaspoon salt
1/4 Teaspoon cinnimon
1 Tablespoon sugar
1 Cup milk
2 Eggs
1 Tablespoon vegetable oil (optional)
Dash of nutmeg (optional)

Mix together, poor into a pan, cook.

When bubbles start to form and pop, but take a while to re-fill with batter, it is time to flip (basically when the batter starts to cook a bit and stiffen to hold shape).

Ideas: Add 1-2 bananas mushed up into the batter, blueberries, chocolate chips, or other sliced fruit to flavor the pancakes.

Fuck-Off Smoothie

Ingredients:
The ingredients of this smoothie really depends on what you've got in your fruit bowl/fridge, basically find all the fruit in the house/kitchen, whatever, and take one of each. And ice-cubes.

Method:
So, you've got one of each fruit in the house, put it in the blender, make sure all the fruit is cut up as small as possible, and all pips are removed. Add ice-cubes. And BAM. One fuck off smoothie.

The name orignated when Seanee lost his temper, and threw the glass at someone, and shouted "Fuck-off you dirty whore." Hope you enjoy this as much as my dog did licking it off the floor.
